The kiddos looove these. They can’t get enough.
I try and pack a healthy lunch for the kiddos but I also know they like a little treat as well, I don’t feel guilty when these are in their lunch.
I double Mandy’s recipe and I only add a layer of mini chocolate chips. I think I’m going to make these with M&M minis next time.
4 cups rolled oats
2 cup crisp rice cereal
1/2 cup butter
1 cup brown sugar
1/2 cup honey
2 teaspoons vanilla extract
1/2 cup miniature chocolate chips
Grease a 9×13 pan.
Mix rolled oats and crisp rice cereal in a large bowl, set aside.
Melt butter in a saucepan over low heat, add brown sugar, honey and vanilla. Whisk until sugar is completely dissolved.
Pour over oat mixture; stir to combine. Spread in prepared pan. Press chocolate chips on top. Refrigerate until chilled. Cut into bars.
Makes 12-15 bars.
