These were super fun to make.
6 ounces sharp cheddar cheese, shredded
1/4 cup butter, softened, cut into pieces
3/4 cup flour
1/2 teaspoon salt
1/4-1/2 teaspoon crushed red pepper flakes
1 tablespoon milk
Preheat oven to 350 degrees.
Place cheese, butter, flour, salt, and crushed red pepper flakes in a food processor and pulse until you have course crumbs. Add milk and pulse until dough forms.
With your hands, form into a ball, flatten on floured surface trying to shape into a rectangle.
Roll dough to 1/8″ think. Using a pizza cutter, cut dough into 1″ squares. Use the flat end of a wooden skewer to poke a hole in the middle of each cracker. (I used a meat thermometer) : )
Using a spatula, transfer the crackers to a prepared baking sheet, placing them close together but not touching each other.
Bake 12-15 minutes, just until edges start to turn brown. Cool completely on wire rack.
Store up to 3 days in an airtight container.
Note: The kids were excited to have these in their lunch this morning.
